BAKED CATFISH
4 fresh catfish,
heads removed
salt and pepper to taste
1/2 cup vegetable oil
25 saltine crackers, crushed

Wash, drain and thoroughly dry catfish. Season with salt and pepper. Roll fish in oil, making sure it is completely covered, then roll in cracker crumbs, coating thoroughly. Place on cookie sheet or baking dish and bake for 1 hour and 15 minutes at 325 degrees. 4 servings.

Dill & Sour Cream Potato Salad
3 pounds unpeeled new potatoes
2/3 cup mayonnaise
1 cup sour cream
1 tablespoon chopped fresh dill or 1 teaspoon dried
2 teaspoons fresh parsley
salt and pepper to taste

Boil potatoes until tender. Cut into bite-size pieces. Combine remaining ingredients and mix with potatoes while they are still hot. Refrigerate overnight.
